Easy Vegan Chili Mac (Under $10 for family dinner)
If you are looking for a tasty, healthy, and affordable family dinner look no further than vegan chili mac!
This meal is so simple to make and it tastes good and is healthy. My teens even say it's really good! I figure this costs under $10 to make and it feeds the whole family.
I serve up some cornbread alongside of the chili mac, too! I use the vegetarian Jiffy boxed corn bread (which is vegan) and I make it using soy milk and applesauce. I've tried making it with egg replacer and also using ground flax, but it comes out the best using applesauce in place of the egg. I put the mix in a bowl and add in the milk and one container or cup of applesauce. Mix it up and if it needs a little more milk for a good consistency then I add that. When I put it in the baking pan, I add a few jalepeno slices to the top of half of it, since my husband likes that.
Here's what you need to make easy vegan chili mac:
- One box of pasta (I like to use elbows, but if I don't have any on hand I will use whatever I have)
- Two cans of Amy's canned chili (or brand of your choice)
- A little vegan butter
What to do:
Get the corn bread in the oven. Cook the pasta according to the directions. Heat up the cans of chili. (This time, I added in a little frozen corn to the chili, only because I had a little in the freezer that I wanted to use up, but it's optional.) When the pasta is done and drained, add in some vegan butter and stir it up. Then put the pasta in a bowl, and top with the desired amount of chili, and add a slice or two of corn bread. Enjoy!
This is a filling meal that is nutritious and affordable. Buying the canned chili for it keeps the costs and preparation time down. I have also made with chili from scratch, but if you want quick and affordable then go with canned.
