Review: Simply Plant Based cookbook by Vanita Rahman

I'm a cookbook lover! I don't want to keep cooking the same things over and over each week, so I love to have a large collection of vegetarian cookbooks that I can turn to. Each week, I pull one or two off the shelf and I thumb through looking for something to make that week for my family. So I was happy to get a new cookbook in the mail, called "Simply Plant Based," by Dr. Vanita Rahman.

First off, I noticed that the book is beautiful. It is filled with full-color photos, which is great because then you know what the dish should look like. When you can see a picture of the recipe it makes you far more interested in trying it. When I thumbed through it I spotted many recipes I plan to try, including:

  • Couscous salad
  • Mediterranean chickpea salad
  • Quick and easy lentil soup
  • Grilled tofu sandwiches
  • Potato panini
  • Fettuccini alfredo with mushrooms
  • Marinated tofu steaks
  • Cauliflower wings
  • Burrito bowls

There are so many great-sounding vegan recipes in this book. It's hard to choose vegan cookbooks because I've bought some before that I end up not finding anything that sounds good or simple. I don't like recipes that require me to buy 30 ingredients and spend two hours preparing. This book is great. The recipes look great, don't require a ton of ingredients, and seem simple enough for my kind of cooking. Two thumbs up!
