Vegan BBQ Beans and Greens Recipe
Beans and greens make for a healthy and tasty meal! Add a little rice on the side and a fruit (I serve fruit with every dinner) and everyone will be happy. It's a fast meal that is nutritious and everyone in the family likes. This is an easy vegan recipe!
Vegan BBQ Beans & Greens Recipe (Easy Vegan Recipe)
What you need:
2 Cans of cannellini beans, drained and rinsed
4 Cloves of garlic, minced
2 Tablespoons of olive oil
4-6 Cups of collar greens or kale (washed and cut or ripped into bite size pieces)
3/4 cup of good BBQ sauce (I use an organic one)
1 tablespoon of soy sauce or Bragg's liquid amino acids
Salt and pepper to taste
2-3 tablespoons of water
What to do:
Put the olive oil, greens, garlic, and a couple of tablespoons of water into a pan, put it on a medium heat, and put a lid on it. Let this heat, stirring once in a while, so that the greens and garlic get soft. After about 10 minutes, add in the beans, BBQ sauce, soy sauce, and salt and pepper. Mix it all together, put the lid on, and let it simmer on a low heat for about 10 minutes until it's had a chance to all come together and for the beans to get hot. That's it! Eat it by itself or serve it up with some rice, fruit, other veggies, etc.
Pictured above you will see my dish that I made to take and eat during my son's soccer practice. Below you will see my husband's plate at home (he eats a lot). It was served up with some roasted cauliflower, rice, and unsweetened applesauce topped with cinnamon. Yum!
