This is a super easy vegan recipe to make and it taste delicious, and is healthy! You can't beat it. It's a cold two bean salad, so it's nice in the summer, to take for lunches, or to pack in a picnic. It's versatile, so you can add in a third type of bean if you would like, or change it up in other ways as you desire. No matter how you make it, it's great! Even the kids like this vegan dish. I like to make this dish in the evening, so it's ready to put in lunches the next day.
Two Bean Salad Recipe
What you need:
2 cans of different kinds of beans (I used chickpeas and kidney beans above)
2 green onions chopped
1/2 cup of chopped parley or cilantro
1/3 cup balsamic vinaigrette
salt and pepper to taste
optional: 1/4 cup of pumpkin seeds or sunflower seeds
What to do:
Add everything to a bowl and mix it up. That's it! Yum!
