I love pot pies! Well, this recipe makes it super easy to make some quick pot pies for dinner. My kids like these and I even gave a few to the neighbor (not vegetarian) who liked them. It's a pot pie that is made with pre-made tube biscuits, which makes it quick and easy. Below you will see what I put in mine, but you can swap out ingredients for what you prefer or have on hand. They are versatile when it comes to what you put in as the vegan pot pie filling. My kids each ate two of them, my husband at four, and I ate two. This recipe below is for 8 mini biscuit pot pies, but if you need more you can always double it. This is an easy vegan recipe the whole family will like!
Vegan Mini Biscuit Pot Pie Recipe
What you need:
1 can of flake tube flaky biscuits (I use Annie's)
2 tablespoons of vegan butter
1 carrot diced
1 medium onion chopped
1 stalk celery chopped
1 cup of frozen peas, thawed
1 package of seitan, chopped (or you can use a package of firm/extra firm tofu, drained, and cut into small cubes)
1 medium sweet potato or regular potato, peeled and cubed
Gravy (see recipe below or use your own homemade or premade one)
What to do:
Add all ingredients except for the biscuits, gravy, and peas to a pan and heat it up, stirring once in a while. The goal is to soften all of the items. It will take about 15 minutes over medium heat. Try the potato after about 15 minutes to see if it's soft enough. Use that as your guide, since that is the item that will take the longest to cook. In the last few minutes add in the peas. Then add in your gravy and mix it all together. Next, take a muffin pan and pull apart the biscuit in the middle, putting one half down in the muffin pan cup. Scoop in the filling, and then put the other half of the biscuit on the top, pushing the sides down all the way around. Do that with each of the eight biscuits, or however many you have decided to use. Put them in a pre-heated oven on 350 degrees for about 18 minutes. Take a look near the end to make sure they are not burning. Use a butter knife to pop the vegan mini biscuit pot pies out. Enjoy!
Easy Vegan Gravy Recipe:
Take 2 tablespoons of vegan butter and melt it in a pan, add in 1/4 cup of flour and whisk it together until it's smooth. Add in 1.5 cups of vegan broth (I used Imagine Foods no chicken broth, but you can use what you prefer), and two tablespoons of soy sauce. Whisk together and cook over a low heat until it's thickened to the consistency that you prefer. It's that easy!
