Vegan Chia Seed Pudding Recipe
Chia seeds offer great nutritional benefits. Chia seeds are packed with fiber, protein, iron, and omega-3 fatty acids. You can create a dessert with them in not feel guilty about eat it. We make vegan chia seed pudding (pictured above). It's super easy to make and tastes delicious! You can serve this up for a breakfast or a treat.
Here's what you need to make vegan chia seed pudding:
- 2 cups unsweetened plant based milk
- 1/2 cup chia seeds
- 2 teaspoons vanilla extract
- 1 tablespoon pure maple syrup or sugar
- toppings, optional
What to do:
Put all the ingredients in a bowl and mix it up. Cover the bowl and put it in the refrigerator. Mix up the contents every hour or two to keep the chia seeds from sinking to the bottom. You will see that it thickens as time goes on. Once the chia seed pudding is the consistently you prefer (after about six hours for us), then you are ready to serve it. You can also keep it in the refrigerator for 4-5 days. Top it with your choice of fruit and toppings.
We like to top ours with cut up strawberries, bananas, blueberries, and a little vegan whipped cream. Delicious!
