The good thing is that lentils are versatile. You can use them for curries, sauces, patties, soups, and more. Here's a recipe for a vegan lentil pasta sauce to give a try.
We have a family of four and this was enough for everyone and it was served as the main dish. If you want a smaller batch you can just cut the recipe in half. You can also put the leftovers in the fridge for a few days and re-heat it for a tasty lunch.
CROCKPOT VEGAN LENTIL PASTA SAUCE RECIPE
Here is what you need:
1,2 cup onion, chopped
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 15-ounce can of diced tomatoes in the juice
1 cup tomato sauce
.75 cup (3/4 cup) of dried lentils, rinsed and drained
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon of salt
1/4 teaspoon crushed red pepper flakes
1 1-pound box of pasta, cooked
What to do:
Put everything but the pasta in the crockpot and mix it together. Cover and cook it for 8-10 hours on low (cut the time in half if you put it on high). After 8 hours taste it to ensure that the lentils and veggies have softened. If they have then it is ready. If they are still a bit crunchy then cook longer. When you are ready to serve your meal, cook the pasta according to the directions, and then ladle the sauce over the top. Some people may want a little sauce and others may want more. Because it has lentils, which are a good source of fiber, some people may fill up quickly. Enjoy!
Notes: Some people like to use white pasta, others prefer whole wheat. Use whichever you prefer. We personally like white pasta better, even if the whole wheat may offer more nutritional benefits.
