I love coleslaw! A good vegan coleslaw is great to serve up with things like vegan meatball subs, skewers, sloppy Joe's, and more. The good thing is that it's also super easy to make. Years ago, I used to buy the head of cabbage and I'd have to use a shredder and shred it all by hand. That was time consuming and hard to do. In recent years, however, you can now find bags of "coleslaw" already pre-shredded in the produce department. The bag comes with a combination of the cabbage, carrot, and purple cabbage. All you need to do is add in the rest of the ingredients to make a nice big bowl of vegan coleslaw. Below is how I make my vegan coleslaw, and the whole family loves it!

Vegan Coleslaw Recipe
What you need:
- Bag of coleslaw mix from the produce department, or one head of cabbage shredded, one carrot shredded, and some purple cabbage shredded (it's easier to buy the pre-shredded mix!).
- 1/2 to 3/4 cup of vegan mayo
- 2 tablespoons lemon juice
- 2 tablespoons sugar
- 1 teaspoon salt
- pepper to taste
What you do:
Start off using 1/2 cup of vegan mayo, and then you can add more as needed. Mix all of the ingredients together in a big bowl. Then you will need to give it a taste and make adjustments. If it seems dry, you need to add in a little more mayo. If it seems too tart, add a little more sugar. Mix and taste again and once you like it, you are done! I use these basic ingredients and then adjust each time to get it right. Why the adjustments? Because you don't always end up with the same amount or cut of coleslaw mix. Sometimes there is more, or the pieces are larger, etc. You want to use this as a start, and then make slight adjustments to taste.
