Looking for a simple vegan meal? Make a loaded baked potato!
My family sometimes has a loaded baked potato for a meal. I have made a variety of toppings to put on them, including coconut bacon, and sauteed mushrooms and onions. Other toppings we include are vegan cheese, sour cream, and butter, or a little salsa. You can also top your baked potato with some chili (left overs or some canned chili to keep it easy).
Baked potatoes are healthy, so just be mindful of what you put on it that may take away from the health aspect of it. You can have it on its own, or pair it up with some fruit or something small on the side.
Above you will see that on this night we had sauteed mushrooms, onions and spinach with a little vegan sour cream. I served up a small dish of leftover chili on the side. Delicious and simple dinner!
I prefer to cook my baked potatoes in the crockpot, by the way. I wash and scrub them, leave them wet and then put them in the crockpot. I add in a splash of water to the crockpot, just to keep them from getting dried out as they cook. I cook them on high for about three hours. Stick a knife in one to test it and see if it's ready or not. If it's ready, then I turn it to "keep warm" until it's time to top them for dinner. If they are not ready, then I cook them a bit longer until they are, but they are usually ready in about three hours on high (this is for a good size baking potato).
