Vegan creamy garlic pasta with peas and seitan recipe
We are pasta lovers in our house, but we get tired of just having mac and cheese or spaghetti. This is a great pasta that is a bit different. It is really easy to make and it tastes great. The husband loved it and the kids were fans, too. If you are looking for a tasty vegan pasta recipe, give this a try! The boxed seitan can be found in grocery stores and health foods stores. It comes in chunks, but you can cut those smaller, so they are bite size pieces going into the pasta dish.
Here's what you need to make the vegan creamy garlic sauce:
- 1 cup of cashews
- 1 cup of plant based milk (unsweetened plain)
- 1 cup of vegetable broth
- 1/2 teaspoon salt
- 1 tablespoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons vegan butter
What you need for the rest:
- 1 box of pasta (shells or elbows)
- 1 cup frozen peas
- 1/3 cup onion
- 1 teaspoon olive oil
- 1 box of seitan, cut into bite size pieces
What to do:
Blend together the cashews, milk, vegetable broth, salt, garlic powder, and onion powder. Set it aside. Start the pot of water for the pasta and prepare according to the directions on the box. In another pot, add the onion and olive oil. Soften the onions, then add in the seitan, peas, and creamy garlic sauce. Heat on low, stirring periodically, until the pasta is done and rained. Then mix the pasta and sauce together. Serve and enjoy!
