Vegan Chicken Salad Recipe

Want to try something different for your sandwich or to eat with crackers? Do you miss eating chicken salad? Make some vegan chicken salad, it's easy and tastes good! Vegan chick'n salad is something that can be served up on toasted bread with some lettuce (my husband also likes to add some jalepenos), or served with some crackers. Either way, it's a nice addition to try. Keep in mind that you don't need to stick to these ingredients below, you can change the ingredients to suit your preferences and taste.

Here's what you need:

1 bag of veggie chick'n strips (any brand will do, I have made it with a few different brands)
1 stalk of celery chopped
1/3 cup of onion, chopped (or less if you prefer, I love onion)
1/4 cup chopped red bell pepper
1 tablespoon relish
1 teaspoon mustard
1/3 cup vegan mayo
Salt to taste

Here's what you do:
Heat up the veggie chick'n strips in a pan with a little bit of olive oil. Once done, chop them up into small pieces and put them in a mixing bowl. Add the rest of the ingredients and mix it all together. If you need a little more mayo, then add some. Once it's all mixed together, put it in the refrigerator to get cold (it tastes better cold to us than warm). Then once it's cold, serve it up!
