I love veggies and I love quinoa! That's what makes this such a great dish. Quinoa is a healthy food that is also a complete protein. It's a staple in our house. When I'm looking for a quick and healthy lunch or dinner I will whip together a quinoa sauté. The great thing about this dish is that you can pretty much put whatever you want in it. I just put a mixture of whatever veggies I happen to have on hand that I want to include. There's no right or wrong here. Some days I will whip together a quick quinoa sauté of quinoa, carrots, red pepper, and onion. Other days, I add in those items, as well as yellow squash, and some seitan. It just depends on what I have on hand at the moment, and if I'm having it for lunch or making it for the family for dinner.
For lunch I am usually making it for just myself or may be me and one other person. Therefore, I will prepare a cup of quinoa, and chop up and sauté some carrots, onions, and red pepper. If I'm making it for dinner for the family, I will prepare two more more cups of quinoa (two cups before being cooked), and mix it with a sauté of onions, carrots, red pepper, yellow squash, and seitan. Everyone in the family likes it. This is also something you can make for a lunch, put in a thermos, and it will still taste good hours later at work or on the go.
While you are preparing the quinoa in one pot, according to the package directions, you will have another pan going where you will sauté the chopped veggies and seitan, if you are using it. You want to sauté the veggies until they are soft. Once they are almost done, I add in two tablespoons of soy sauce and about two tablespoons of brown sugar. Mix that in and let it heat up for a minute. It makes a nice tasting sauce.
Mix the veggie sauté with the cooked quinoa. Serve and enjoy!
