Vegan Coconut Bacon Recipe
Making vegan coconut back is simple and quick. Plus, it tastes great! You can use it to top some baked potato soup, to make a veggie BLT, in a salad, in vegan mac and cheese, or to eat as a snack. There are many ways you can use vegan coconut bacon and they are all great. For this recipe you will need the large flake unsweetened coconut. You can usually find this at health food stores, I've also found it at HomeGoods, and some grocery stores have it. I have used Let's Do Organic brand, which is a popular brand for it, but there are plenty of others, too. To see more coconut flake varieties, click here.
What you need:
1.5 cups of unsweetened flake coconut
2 teaspoons apple cider vinegar
2 teaspoons maple syrup
2 teaspoons liquid smoke
1 tablespoon soy sauce or tamari
What to do:
Heat the oven to 325 degrees. Mix the liquid ingredients in a bowl. Add the coconut to cover it all with the liquid. Lay it out on a baking sheet that is lined with parchment paper. Bake it for 15 minutes, but every few minutes stir it around to keep it from burning. Try to make sure that it's not all in piles. It turns out better if it's spread out more on the baking sheet. Take it out and let it cool. It will become crispy and delicious. You can use it right away or store it in the freezer. It's good even right out of the freezer!
