10-Minute Vegan Taco Salad
Looking for a real quick lunch, or even a fast dinner option? This is something that I whip together real quick for a fast lunch, and once in a while when we are camping I make it as a quick vegan dinner. As long as you have the ingredients on hand, which I usually do, you only need about 10 minutes to put it all together. Making the 10-Minute Vegan Taco Salad is fast, delicious, and it's nutritious!
I crumble up some tortilla chips into a big bowl (making them bite size), then top it with some chopped lettuce, tomato, onion, a little ground veggie burger crumbles (or black beans), some vegan cheese, and then add a little salsa, and if you have it, some vegan sour cream. That's it! Mix it up and enjoy. When I make this for a dinner, I use a big bowl so it's enough for everyone, and then I usually add in a little vegan ranch at the end, so that it's nice and moist. The kids like this, too!
