Vegan Chickpea Salad Recipe


If you are looking for a good spread for a sandwich or to eat with crackers, consider making some vegan chickpea salad. Some people refer to this as "tuna-less salad," but I call it what it is, which is chickpea salad. Read why I call it that here. My son and I like to eat this on crackers, while my husband and daughter like it on bread (I add a lettuce to the sandwich option). It's easy to make, affordable, and tastes really good!

Vegan Chickpea Salad Recipe

What you need:

  • 1 can chickpeas (preferably organic), drained and rinsed
  • 1 stalk of celery chopped
  • 1/4 cup red bell pepper, chopped
  • half a small onion, chopped
  • 1/2 teaspoon of turmeric
  • 2 tablespoons relish
  • 1 tablespoon mustard
  • 1/2 cup of vegan mayo
  • 1/2 teaspoon salt
  • dash of pepper

Smash the chickpeas up by hand, using a fork, or by putting them in a food processor. I prefer to use the food processor, because I like the texture better that it creates, but if I don't feel like going that route I will just smash them with a fork. Add in the remaining ingredients. Stir together well. That's it, it's that easy! Now it's ready for using on bread or with crackers.  You can modify this recipe if you prefer more or less of something, such as more onion, celery, etc. Vegan chickpea salad is delicious, nutritious, affordable, and even the kids like it! This vegan recipe is easy to make when you are packing a picnic lunch. Pictured above is a lunch I made for us to take to the spring.
