Cheesy Vegan Quinoa Casserole Recipe
Love mac and cheese, but want it to be a bit healthier? Make Cheesy Vegan Quinoa Casserole! It's essentially a vegan quinoa mac and cheese casserole, and it's great. This is a dish that is easy to make and everyone likes it. The kids will love it, too!
Quinoa (pronounced KEEN-wah) is a healthy whole grain that is also whole grain, and it is a complete protein (offering all essential amino acids).
I use organic quinoa, plain unsweetened almond milk, and Violife cheese for the ingredients below.
Here's what you need to make Cheesy Vegan Quinoa Casserole:
1.5 cups of quinoa
3 cups of vegetable broth
1 onion, chopped
2 cloves garlic, minced
1 medium tomato, diced
1.5 cups frozen peas, thawed
1 tablespoon flour
1/2 teaspoon salt
1 tablespoon olive oil
1 cup unsweetened original plant based milk
1.5 cups vegan shredded cheese
Rinse the quinoa and put it in a pot with the vegetable broth. Bring it to a boil, then turn it down low and let it simmer for about 15 minutes until all the liquid is absorbed. Preheat the oven to 350 degrees. While the quinoa is cooking, put the olive oil, onion, and garlic into a large pan and heat it to soften the onions for a few minutes. Add in the tomatoes and cook on medium for another couple of minutes. Add in the flour and mix it in so that is absorbed and not clumpy. Add in the milk and cheese. Keep the heat on a low-medium and stir it around some to melt the cheese and turn it into a sauce that is mixed in with the rest of the ingredients. Add in the peas. Put the mixture into a baking dish. Bake it in the oven for about 15 minutes. Enjoy!
