Vegan Tater Tot Casserole Recipe

Soy Curls review

Soycurls

Last night we tried Soy Curls, made by Butler Foods. I used them to make tater tot casserole, which is a dish I like. Essentially, it is a casserole that has soy curls, onions, peas, almond milk, and seasonings (I use Better than Bullion broth mixed in with the milk), and then it's topped with tater tots and baked. Yum!

The soy curls come dehydrated in a bag. You just soak them in water for 8-10 minutes, drain the water, and you are ready to use them. Once you drain them they pretty much have no flavor on their own. It's like tofu - absorbing the flavors of the dish you are preparing. I added them to my mixture mentioned above and then tasted them. Delicious! I added everything to the casserole dish, topped it with tater tots, and let it bake for 40 minutes.

The casserole was great! We all really liked the Soy Curls. They are easy to use, healthy, and taste great. Soy Curls are made from non-gmo soy, they are vegan, and high in protein. Two thumbs up, we'll be buying these again regularly! You can read about Soy Curls and find out where to buy them in your area here. If the stores in your area don't have them you can order them online. They do sell a seasoning mix to use with them, but I didn't use that and they were great. Butler Foods also makes some great vegan jerky and taco crumbles.
