Vegan roasted vegetables stir fry with seitan
Want a quick, simply, delicious, and healthy meal for your family? Make what I call a vegan roasted vegetable stir fry with seitan. It's like a stir-fry, only it's made in the oven. You can use a variety of vegetables, so pick and choose which ones you want to roast.Below is what I put in mine last night, but you can easily swap out different veggies for ones you prefer or have on hand. I served it up with some quinoa and fresh fruit. Everyone loved it! Yum!
If you are not familiar with seitan you need to get to know it. It's a delicious "wheat meat" that can be used in a variety of ways. You can buy it plain or seasoned at most health food stores, as well as places like Whole Foods Market. My favorite ones are the plain or "chicken style" seitain, but the others are good, too. Give them a try to see which ones you like.
Vegan Roasted Vegetable Stir-Fry with Seitan Recipe
1/2 zucchini cut into bite size pieces
1 yellow squash cut into bite size pieces
1 container white mushrooms
1/2 red pepper cut into bite size pieces
1 package prepared seitan, cut into bite size pieces
2 tablespoons olive oil or 1/4 cup vegetable broth
1/2 teaspoon salt (optional)
Preheat oven to 425 degrees. Mix all of the ingredients together in a bowl or in a pan. Cover with foil and put in the oven for 30 minutes. Halfway through stir everything around, cover again, and put back in the oven. After 30 minutes try a piece of the zucchini to see if it's soft or not. If it's not yet soft and ready to eat, then put it back in the oven for another 5 minutes or until it's soft and ready to eat. When it's finished, serve it up with some quinoa, rice, or couscous (on the side or on top of it). Yum!
