Simple vegan potato salad recipe


Vegan potato salad? No problem! You can make delicious vegan potato salad very easily. It will please a crowd, including those who are not used to eating vegan versions of such foods. Trust me!


Here's what you need:

1 pound of organic potatoes peeled and cut into bite size chunks (I use russet potatoes)
1 cup of vegan mayo
2 tablespoons vinegar
2 tablespoons prepared mustard
2 tablespoons dill relish
1 stalk of celery chopped
1/2 small onion chopped
salt and pepper to taste

Boil the potatoes until they are tender, then drain them and run them under cold water. After draining, add them to a large bowl. Add in the rest of the ingredients, and mix it all together. Put it in the refrigerator to get cold for a few hours. Yum!

Vegan potato salad takes about 20 minutes total to prepare. It's easy and delicious. It's also very versatile, so you can swap out the ingredients you want, use the type of potatoes you prefer, add more onion, etc. You can't go wrong when making it!
