Vegan Cauliflower Soup Recipe
What you need:
- 1 small head of cauliflower, chopped into small pieces
- 1/2 of a medium size onion, chopped
- 4 cups of vegetable broth
- .5 teaspoon pepper
- 1 teaspoon salt
- 2 tablespoons vegan butter/margarine
- 1 teaspoon lemon juice
What you do:
Add all of the ingredients into your crockpot, mix together, and put it on low for 6 hours (or high for 3 hours). Then you need to blend it by either using an immersion blender or by putting into your blender. Blend until smooth, then transfer back to your crockpot. Give it a stir and serve. It's great served up with a nice crusty bread. Enjoy!
