When I was recently browsing the vegan book titles I came across The 40-Year-Old Vegan: 75 Recipes to Make You Leaner, Cleaner, and Greener in the Second Half of Life. I was intrigued, because I'm in my 40's. As I looked through it I found myself drawn to a few of the soup recipes. There were numerous ones that sounded delicious. Although it was a very warm day here in Florida today, I made the vegan pasta fagioli recipe from this book for dinner.
The recipe is easy to follow. I didn't have a couple of items on hand, such as the rosemary and thyme, so I just omitted them. For broth I always used a vegan organic vegetable broth. I also put a little more pasta in there than is called for, because I like a lot of pasta in the soup. Once it was one I topped it with some Nooch It that I had on hand, rather than vegan parmesan. Delicious! My daughter and I both had this soup for dinner and we both enjoyed it. I'm looking forward to my husband and I having some of the leftovers for tomorrow's lunch.
I loved this soup and will absolutely be making this recipe again. Two thumbs up! I am looking forward to trying more of the soup recipes in this book.
