I've been making tofu salad for over 20 years. It's become a standard staple in our house. For those not familiar with it, tofu salad is like the vegan version of egg salad. Some people call it eggless egg salad, but I prefer to call it tofu salad. It's simple, delicious, healthy, and quick to make. Here's how you do it:
Vegan Tofu Salad Recipe (eggless egg salad)
1 container firm tofu, well drained
1 stalk of celery chopped
1/4 cup chopped onion
1/4 cup chopped red pepper
1 tablespoon mustard
1 teaspoon turmeric
1/4 cup vegan mayo
Take a fork and mash the tofu into a mixing bowl. Add all of the other ingredients, and mix together. If you prefer a little more mayo, add a little more. Store leftovers in the refrigerator.
That's it, it's that easy! My husband likes it on bread as a sandwich (I add some lettuce to it), but the kids and I prefer to eat it on the top of crackers. Try it both ways to see which one you prefer. Either way it's yummy!
