One of my very favorite people in the vegetarian world is the Jazzy Vegetarian. I tape her cooking show and then watch it on the weekends as I eat my breakfast. And I love her cookbooks! Tonight for dinner I made two recipes from her "Jazzy Vegetarian Classics" cookbook. I made the coconut encrusted tofu, and the maple scallion dipping sauce. Delicious!
The recipes were super easy to make, and it turned out looking very fancy. Everyone liked it, including the kids. Two thumbs up for this tasty and fancy looking dish! I served it up with some couscous (keeping the meal easy to make), and baked sweet potato (which I had put in the crockpot at lunch time). Delicious!
