If you are looking for a quick meal that your family will love, consider making vegan tostadas. They are so easy to make and everyone in my family loves them, so maybe they will in yours, too!
Here's what you need to make vegan tostadas:
- Corn tostada shells. These can be purchased down your Mexican/Hispanic food aisle at the grocery store.
- A can of re-fried beans. I use an organic brand. One can of beans will make around 8 tostadas.
- Chopped lettuce, tomato, onion, and any other veggie you may want to add. My husband likes jalepeno's on his tostadas, but I don't.
- Vegan cheese. I usually use the Daiya cheese.
- Vegan sour cream
All you do is warm the shells for about 2-3 minutes in the oven, arm the beans, and then spread the beans on the tostada shells. Then top with all of your other ingredients. Within 15 minute you have a healthy and delicious meal that your family will enjoy!
