Vegan Broccoli Pasta Recipe - a dish kids love!
Last year I went to dinner at a friend's house. One of the dishes she served was broccoli pasta. My kids absolutely loved it! They ate a lot of it at the dinner that night, but then started asking me to make it in the weeks that followed. I was surprised at how badly they wanted me to start making that dish, so I asked the friend how to make the dish.
I've been making this vegan broccoli pasta dish ever since, because my kids love it! It has to be one of their top two favorite meals that I make (mushroom stroganoff being the other). This dish is easy to make and it tastes great.
Here's what you need to make vegan broccoli pasta:
- One pound box of penne pasta
- One head of broccoli
- 3-4 garlic cloves (depending on how much you like)
- 3/4 cup-1 cup of extra virgin olive oil
- Vegan parmesan cheese (optional)
Steam the broccoli to where it's just done and is not too soft. Meanwhile, cook the pasta according to the package instructions. Mince the garlic and put it in a large frying pan with a teaspoon of olive oil. Heat it up so that the garlic begins to turn brown. Once the broccoli is done cooking chop it all up into fine pieces. Add it to the frying pan that has the garlic. Add the olive oil to this pan as well. Use 3/4 of a cup of olive oil. Mix it all together and put it on warm. If it seems dry, add just a little more olive oil. Once you drain the pasta, mix the broccoli mixture into it. Top it with vegan parmesan (optional). Enjoy!
