I stopped in the local health food store (Love's Whole Foods) for a moment and as I was walking around something caught my eye. It was the gluten free Lundberg Organic Brown Rice Pasta and Sauce. There were four different flavors on the shelf, but I decided to go with the leek and mushroom one. This became my lunch, since the rest of my family was gone off doing a slot car event for the afternoon.
This is a super easy dish to make and was ready in 10 minutes. And it tasted great! I ate every bit of it for lunch. Loved it! And... it's vegan and gluten free! A match made in heaven for me these days.
Not only did I enjoy this as a lunch for myself, but it would make a great side dish paired with dinner. Yum! I will be buying this again. I also want to try the other flavors that are on the shelf.
