Vegan Chili Mac (and Gluten Free) from Fresh From the Vegan Slow Cooker
I'm a big fan of Robin Robertson. I've shared that before on here. I love her cookbooks and use them often. Tonight I tried a new recipe from her book called "Fresh from the Vegan Slow Cooker." It was a really cold day today and I thought chili mac sounded like the perfect meal to take on a cold evening. And it was!
First, I have to share that I made this meal gluten free. I opted to use Hodgson Mill gluten free elbow pasta. Hodgson Mill makes my favorite gluten free pasta, they are all great! Other than that I followed the recipe just as it was in the book. It all came out great!
We really liked the vegan gluten free chili mac. This is a dish I would make again on a cold night. It was super easy to make and tasted good. A hearty meal for a cold night. I served it up with some kale salad (kale mixed with some olive oil, salt, lemon juice and a little nutritional yeast).
