I recently bought a box of the Dominex Eggplant Cutlets at a local health food store. I bought them with the intention on using them for quick sandwiches (I love eggplant sandwiches). But last night I decided to take a different direction with and made vegan eggplant parmigiana!
The Dominix eggplant cutlets are vegan when you buy them, so I just followed the directions on the back to make vegan eggplant parmigiana. I layered them in a baking dish with pasta sauce and vegan daiya cheese. Soon after they were out of the oven and ready to eat. To go with the eggplant cutlets I made a small batch of spaghetti and a great salad.
We all loved the eggplant parmigiana! Even the kids loved it and asked for seconds. Two thumbs up! I will certainly be buying it again to make vegan eggplant parmigiana, as well as eggplant sandwiches. Not only does it taste great, but it's super easy to cook up and saves me time of cutting and breading the eggplant myself. Yum!
