Today I made a trio of dips to take to a vegan potluck. Along with the three dips I took store bought organic tortilla chips. One of the three dips I made was guacamole. Yum! I took another recipe I found online for guacamole and I changed it up some to my preferences. The result was great. This recipe for vegan guacamole is super easy to make and tastes great!
3 avocados (ripe, on the soft side and ready to be used)
1 Roma tomato
15 leaves of fresh cilantro
Juice from one lime (or around 1.5 tablespoons)
1/2 teaspoon onion powder
1/2 teaspoon salt
Wash avocados and then cut all the way around them. Twist and open the avocados up. Remove the seed. Take a spoon and scoop out all the avocado (leave out any black avocado) into a mixing bowl. Take a fork and slightly mash the avocado. Next, chop the Roma tomato and add it to the bowl. Chop the cilantro and add it to the bowl. Then, add in the lime juice, onion powder, and salt. Mix everythign together. Taste and see if it needs more seasoning. Use it right away or put it in the fridge. Yum!
