Sunshine Burger Vegan Breakfast Casserole
This weekend we at the Daytona Beach Vegetarian Society held one of our monthly events at the library. Along with giving out vegan literature and showing a movie, we also put out a table full of vegan food for people to try. We are fortunate to have Carol, from Sunshine Burger, as part of our group. She showed up with an amazing vegan breakfast casserole that everyone loved!
Check out the picture below and then give making it a try. You will not be disappointed. This is a great vegan breakfast casserole whether you are going to have guests or just for your immediate family. It's quick, easy, and tastes great!
What she did is start with her vegan hemp and sage breakfast patties, breaking them up and laying them down across the bottom of a baking dish. Then she topped it with a little bit of organic ketchup. Then she sauted some onions and red and green pepper and mixed with Cascadian Farms organic hash browns. She put the has brown and green pepper/onion mixture on top of the Sunshine Burger patties in the baking dish, and sprinkled a little bit of daiya cheddar cheese. Once you have it assembled, just bake it for 30 minutes on 350 degrees. Then, serve and enjoy!
We served this up to a room full of people, along with a variety of other breakfast dishes that included frozen waffles, quinoa flakes, tofu scramble, muffins, and more. Everyone was pleased and loved it!
I can not wait to try that Breakfast Casserole.
