I'm a vegan cookbook junkie. I admit it! But I really enjoy trying new recipes. It's fun and keeps things interesting. My favorite cookbook author, as you already know, is Robin Robertson. I've been a huge fan of her "Fresh from the Vegetarian Slow Cooker" book for quite some time (in addition to many others). But she recently came out with "Fresh From the Vegan Slow Cooker" and I had to add it to my collect (mind you it's a collection that is having trouble fitting on my shelves anymore).
I received it this week and looked it over. I'm excited! So many recipes in there that I want to try. I wasted no time in getting started. Made my first recipe from "Fresh from the Vegan Slow Cooker" today. I made the Baked Potato soup recipe. I used organic potatoes, organic vegetable broth, and organic onion, making it a mainly organic soup. It was super easy to make and we loved it!
I put together a plate of toppings to choose from, all things we like on baked potatoes. I had chopped onion, vegan sour cream, vegan bacon cut into small pieces, and daiya shredded cheddar cheese. The only thing that I forgot was the chives (darn it!). We topped the soup with what we wanted and stirred it in. Yum! This is a great tasting soup that was satisfying and simple to make. I will certainly be making it again. Can't wait to try another recipe from this book. I love using my slow cooker, so it's great to have a batch of new recipes to try!
