Vegan Raspberry Cobbler Recipe
I have posted a recipe before for vegan cobbler. You can find it here. I decided to take that recipe and make it raspberry the other day. After it cooked and cooled for a few minutes I topped vegan vanilla ice cream with a scoop of the raspberry clobbler. Yum! What a delicious treat. I served it to a guest that I had over for dinner and she enjoyed it as well, and couldn't believe it was vegan ice cream.
Here's how to make the vegan raspberry cobbler:
1 small container of washed/dried raspberries
1 3/4 cups of your favorite granola
2 tablespoons of light brown sugar
2 tablespoons of granulated sugar
Soy yogurt or vegan vanilla ice cream
The oven needs to be preheated to 425F. Take 9-inch pie dish, lightly oil and set aside. In a bowl, toss the light brown sugar, granola and berries together, so that it is all combined. Then transfer it to the pie dish and sprinkle the granulated sugar across the top. Cover tightly with aluminum foil and bake for about 25 minutes. Let it cool for a couple of minutes, and then scoop it over your soy yogurt or ice cream. Enjoy!
