Robertson's. I pretty much own all of her books and use many recipes from them. My latest book of hers that I've acquired is "Party Vegan: Fabulous, Fun Food for Every Occasion."
Last night I hosted a vegan potluck at my house. About a week ago I thumbed through the book for ideas and came across the list of potluck tips. I found it very helpful in planning the potluck. Then I saw a recipe that sounded good. It was for Confetti Corn Muffins. So I made them yesterday for the potluck.
Yum! Not only do these muffins look great, but they taste really good as well. Everyone seemed to like them (with the exception of one child, but I warned him ahead of time that it was adult food!). They are corn muffins that have corn, red pepper, cilantro, and green chilis. The recipe calls for chipotle, which I could not find, so I added a tad of kick with just a tablespoon or two of diced jalapeno.
Loved them! These will certainly be made again and again in this house. Yet another hit from my favorite cookbook author. This is a great book to have on hand in case you plan to have any vegan parties, potlucks, or food gatherings.
