Vegan Black Bean Soup from "Fresh From the Vegetarian Slow Cooker"


Last night for dinner we tried yet another recipe from Robin Robertson's book titled "Fresh From the Slow Cooker." I have quite a few recipes that I like from that book, and I wanted to make a soup. Having everything on hand to make the black bean soup, I decided to give it a try!

The soup was simple to make and I had it going in the slow cooker in no time. I ended up serving it up with some drop biscuits from her "1,000 Vegan Recipes" book. It was very good! We really liked the soup (and the biscuits, which we have had before).

Today for lunch we finished up the leftover soup with a sandwich. It's filling, nutritious, and tasty! Two thumbs up!
