I came across "The Everything Vegan Cookbook" while at the library. Always being a sucker for vegan cookbooks, I checked it out. I'm impressed! There are so many recipes in this cookbook that I want to try.
For starters, this morning I tried the "Maple Cinnamon Breakfast Quinoa." Yes, I had quinoa for breakfast - which was a first for me! I've had it for other meals, but never as a breakfast. I liked it! Very similar to eating an oatmeal-type of breakfast, but healthier. You can just tell you are eating healthy with this breakfast!
Can't wait to try a list of other recipes in this book, including the beer battered tofu! I have a feeling this is one I will be buying to add to my ever-growing shelf of vegan cookbooks!
