Last night I once again made the roasted vegetable strudel from "1,000
Vegan Recipes." It has become a favorite in our house! While I was making mushroom gravy before it each time before, this time I decided to make the vegan hollandaise sauce that Robin Roberts suggests in the book.
First, I should note that there is a typo in the book that I contacted Robin about when I first tried to make it a while back. It says add the "tofu" but it should say add the "cashew mixture." There is no tofu used in it.
The vegan hollandaise sauce was super easy to make and it tasted great! She is right, it is perfect on the roasted vegetable strudel, even though I still like the gravy over it as well. Two thumbs up for this simple and tasty sauce!
If you haven't tried making the roasted vegetable strudel from this book you must! It is absolutely delicious!
