When I first came across this dish in what has become one of my very
favorite cookbooks, "1,000 Vegan Recipes," I was excited. It said it was a kid-friendly meal and it contained wagon wheel pasta. It seemed like a nice idea, even though I couldn't find any whole wheat wagon wheels throughout my search.
I followed the recipe and prepared the dish, which looked pretty good as we sat down to eat. However, it was a bit disappointing. Not sure what went amiss with this one, but I wasn't digging the flavor. Actually, nobody at the table was, and the kids didn't like it at all (although they did like the shape of the pasta that they wasted on the plate).
I've made many recipes from this book thus far and from what I recall this is the first one that didn't do it for me. Have you tried it? What did you think?
