I was looking for a nice summery dish to serve to my friend for lunch. I came across the tofu waldorf salad wrap recipe and thought it sounded just right.
The recipe was simple to follow and didn't take long to make. I made it up ahead of time and kept it in the refrigerator until I was ready to make the wraps. I used a flabread wrap and put the salad mixture in, along with lettuce, and wrapped it up tightly. I served it along side some blue corn chips and salsa, and some grapefruit, as well as lemon bars for dessert.
This was the first time I made this recipe, so preparing it for a guest I was really hoping that it turned out well. It was very good! Both of us really liked it a lot. I will certainly make this again, it's very tasty and a great way to eat some healthy tofu. Yum!
