Roasted Chickpeas - a Healthy and Tasty Snack

Looking for a healthy and quick vegan snack that is also tasty? Simply take a can of organic chickpeas, drain and rinse, then toss in a bowl with a tablespoon of olive oil. Lay them out on a baking sheet, sprinkle with a little salt and then bake for 30 minutes at 375 degrees.

After they are completely cool, enjoy! They are great... kind of like eating nuts.

I tried this recipe tonight after seeing in "1,000 Vegan Recipes," which has become my favorite cookbook. This recipe is so easy, quick and tastes really good!

Just one more reason to love this book. Who knew that roasting some chickpeas would be so great?! Even the kids loved these!
