"The Joy of Vegan Baking" Book Review

For my birthday yesterday, I made the vegan carrot cake from "The Joy of Vegan Baking" by Colleen Patrick-Goudreau. I'm happy to report that it tasted very good!

The recipe was pretty simple to follow. However, when it came to combining all theFood pictures 002 ingredients together, it was just a little too dry. So I added about a third of a cup of almond milk to the mix, just to be able to pull it all together. That worked fine and into the oven it went!

The cream cheese frosting turned out pretty good. It does not taste all that much like traditional cream cheese frosting to me, but I think it was still good. I love how it's loaded with carrot, walnuts and raisins.

This was a tasty recipe for carrot cake and I'm sure I'll make it again. The kids even liked it!

This was not the first recipe I have made from this book. I've had it for probably a year now and have made quite a few. Two of my favorites are the lemon bars and the chocolate mousse. Both are absolutely delicious and I have even served them to non-vegans, who loved them!

If you like baking, as I do, this is a great book to add to your collection. It's full of yummy treats and great pictures, and you don't have to search for substitutes, like with so many other non-vegan dessert recipes.

Update: two days after my birthday: Had some of the left over carrot cake. It was even better than the first day I made it! This cake was delicious and the frosting tasted more like traditional cream cheese frosting. I think this has been the best vegan cake I've had! Yum! So next time, I would make it a day ahead and store it covered in the fridge.

I am glad you decided to critique this book because I bought it about six months ago when I wanted to start giving up eggs. I haven't used it since, it just sits on my shelf collecting dust. Since being veganized by Earthlings, and reading this blog entry, I think I'll pick it back up and do some baking for my family.

Just a note to add that the vegan pancakes using maple syrup as a sweetener are absolutely to die for! My kids love them!


Awesome, get baking! You will find so many tasty things in that book. My favorites are the chocolate mousse, lemon bars and now also the carrot cake! Take a picture of what you make and write a note about it so you can put it on here as guest blog!
