Coconut Curry from "The Indian Vegan Kitchen"

Last night I made my first recipe out of my newest cookbook, "The Indian VeganFood pictures 016 
." I made the recipe for the coconut curry.

The preparation time in the book says it is 15 minutes, but it was quite a bit longer for me. I think if you have all those vegetables pre-washed and chopped it would be 15 minutes. But it took me longer than that to wash and cut them all.

The recipe was easy to follow. The taste was okay, although not as good as I had expected it to be. The kids wouldn't eat much of it, but that is not surprising, because they often don't like rice dishes. So overall, it was pretty good, but probably not good enough to make me want to plan on cooking it again anytime soon.

I'm looking forward to trying my next recipe from this book.
