Vegan Pierogis with Fried Onions from "1,000 Vegan Recipes"

Post written by VegBlogger. Follow me on Twitter.

Tonight I tried yet another dish from the book "1,000 Vegan Recipes" by one of my favorite cookbook authors, Robin Robertson. I made the recipe for the pierogis with fried onions.

I have made my own pierogis quite a few times before, but they have never turned out all that well. I could never get the dough just right. So when I saw this recipe this morning, I jumped at the chance to make them.

The recipe was incredibly easy to follow and the dish turned out fantastic! My daughter loved helping to make them as well. She put the filling on the dough and then crimped the edges with a fork.

I served them up with cut up Tofurky Kielbasa, peas and apple slices. I topped the pierogis with some Tofutti vegan sour cream (I use the non-hydrogenated one).

Yet another great meal from "1,000 Vegan Recipes." I have many more I plan to try. You can read about other dishes I've made from it here and here. This is a book that should be on every cook's shelf!

By the way, there is a great blog that is dedicated to this cookbook, called "Cooking from 1,000 Vegan Recipes." The ladies over there are making their way through the whole book and blogging all the recipes, with photos (which is great, because the book doesn't have photos).
