I have made my own pierogis quite a few times before, but they have never turned out all that well. I could never get the dough just right. So when I saw this recipe this morning, I jumped at the chance to make them.
The recipe was incredibly easy to follow and the dish turned out fantastic! My daughter loved helping to make them as well. She put the filling on the dough and then crimped the edges with a fork.
Yet another great meal from "1,000 Vegan Recipes." I have many more I plan to try. You can read about other dishes I've made from it here and here. This is a book that should be on every cook's shelf!
By the way, there is a great blog that is dedicated to this cookbook, called "Cooking from 1,000 Vegan Recipes." The ladies over there are making their way through the whole book and blogging all the recipes, with photos (which is great, because the book doesn't have photos).
