Vegan Christmas Sugar Cookies

Looking for a fun way to get the kids involved in the holidays? Make some vegan Christmas (or any other holiday) sugar cookies! They are super easy to make and the kids have a lot of fun in the process. Here's what you need:

2 cups of all-purpose flour
1/4 teaspoon salt
3/4 cup vegan/natural sugar
3/4 cup vegan butter, softened
egg replacer equivalent to one egg
1 teaspoon pure vanilla exract
vegan sprinkles and/or decorations

To start, combine the flour and salt. In a separate bowl, cream the butter and sugar with an electric mixer. Add in the egg replacer, vanilla, and continue to beat for a minute. Then add in flour mixture and blend until combined. Put the dough into a ball and wrap it completely with wax paper (or similar) and put it in the refridgerator for one hour. After an hour, preheat the oven to 325 degrees. Take out the dough and roll it out onto the counter (you may need to sprinkle some flour to keep everything from sticking). Use cookie cutters to cut out the shapes and place them on ungreased cookie sheets. Re-roll and roll out the dough to create more to cut cookies from. Add sprinkles and decorations and then put in the oven for around 13 minutes (don't let them get dark). Using a spatula, transfer cookies to a cool surface. Enjoy!

I didn't have 2 cups of all-purpose flour on hand. So I used half all-purpose and half oat flour. When it comes to using sprinkles to decorate, you can get vegan ones at health food stores. Most sprinkles in regular grocery stores are not vegetarian, because of the confectioner's glaze or shallac used in them (which contains bug extract). I used the Edward and Sons Sprinkelz, which were available at Whole Foods. They turned out great and they kids loved them, especially since they never get to eat other sprinkles because of the bug content in them. They had a great time making and eating these cookies.
