Vegan Banana Nut Pancakes

This morning I made some healthy homemade vegan banana nut pancakes. Usually I make something like this on the weekend, but the kids were asking for pancakes today and I didn't have any in the freezer.

Just so you know, pancakes do well in the freezer! You can make up a whole batch of them, let them completely cool on a cooling rack, and then freeze them in a container (nothing is needed between them). When the kids want one, put it on a non-plastic plate and pop it in the microwave for about 50 seconds and enjoy! Works just as well as the store-bought frozen pancakes, only they are healthier and cheaper to make.

Here's what you need to make vegan banana nut pancakes:

1.5 cups of whole wheat pastry flour (or spelt flour)

1/4 teaspoon cinnamon

1/4 teaspoon allspice

1/2 teaspoon salt

2 tablespoons sugar

2 teaspoons baking powder

1.5 cups of soy or almond milk

2 ripe bananas peeled and sliced

1/4 cup chopped walnuts (optional)

First, combine all the dry ingredients. Then fold in the banana and milk. Gently combine everything until all the ingredients are wet. Then, ladle 3-4 tablespoons of batter at a time onto the hot griddle! Cook on each side until lightly browned (about two minutes each side). Top with pure maple syrup and enjoy! Or... eat them plain as a healthy snack.

If you prefer blueberry pancakes you can skip the banana, spices and walnuts and just add in a cup of blueberries to the rest of the ingredients.

We do a similar recipe with sweet potatoes too. You just have to remember to bake off the taters the night before.
