Since writing my initial review of the "1,000 Vegan Recipes" by Robin Robertson, I have now made two more recipes. Over this last week I made the golden veggie burgers and the roasted vegetable strudel.
The roasted vegetable strudel is absolutely delicious! This dish is loaded with great tasting vegetables and the it looks great as well - very fancy. For this recipe I used organic fillo dough, by The Fillo Factory. It is available at some health food stores. The white beans make it have a cheesy type of texture with the vegetables. This would make a great dish to prepare when cooking for guests. Unfortunately, we ate it all up before I remembered that I should take a picture of it! This is an excellent dish that I will be making again, and the next time I do I will snap a picture.
The golden veggie burgers were delicious as well. As I mentioned before, I don't have a working food processor, so I had to use the blender again (I really need a new food processor!). Using that I know I didn't achieve the consistency that the recipe called for, but it worked out well for me anyway. The veggie burgers have a great taste and I know I'll make these again as well! I love that this book offers seven different veggie burger recipes. Homemade veggie burgers are so much better than any you can buy in the store!
