Vegan Waldorf Salad is not only easy to make, but it is tasty and sure to please a crowd! This dish is great anytime of year, is especially fun to take to potluck gatherings, and makes for a nice side dish with dinner. It also helps to use up some apples if you have some extras. Even the kids like this one!
Here's what you need to make vegan Waldorf Salad (recipe serves 4):
4 medium sized red apples, cored and diced (not peeled)
1/2 cup of finely chopped celery
1/3 cup chopped walnuts
1/2 cup vegan mayo (we use Vegenaise)
1/3 cup raisins (optional)
Salt to taste
When it comes to the apples, organic ones are preferred. Mix together all the ingredients in a bowl. Then put it in the refrigerator for a couple of hours before serving. Some people dish it up as is, or simply set it out at a potluck, otherwise you can make it look a little fancier on the plate by putting a scoop of it on a piece of lettuce. Enjoy!
