These cookie are great any time of the year and everyone always loves them!
Vegan Snow Ball Cookies
1 cup of vegan butter
¼ cup of sugar
2 teaspoons vanilla extract
2 cups of flour
1 cup of finely chopped walnuts
1 cup of powdered sugar
What to do:
Pre-heat oven to 300 degrees and get out two large cookie sheets. In a large bowl use a hand mixer to cream together the butter, sugar, and vanilla. Add in the flour and mix thoroughly. Then add the chopped nuts and mix well, blending for around 30 seconds. Form the dough into small balls and place them on the cookie sheet. Bake for 30 minutes. When you remove them from the oven roll each cookie into the powdered sugar. Let them cool, then enjoy!
The ones pictured are gluten free. I chose to use the Bob's Red Mill Gluten Free All Purpose Baking Flour. You can't tell the difference, they came out great! Snow ball cookies that are tasty, gluten free, and vegan!
