Vegan Cauliflower Alfredo with Shells Recipe

1 pound of medium pasta shells (or pasta of your choice)
1 large head of cauliflower, washed and cut into small pieces/florets
7 cloves of garlic
2 tbs olive oil
1 teaspoon of salt
1 tbs lemon juice
2.5-3 cups of vegetable broth
1/2 cup of cashew cream (put 1/2 cup of raw cashews in blender, add just enough water to cover them, and blend until smooth)
Freshly ground pepper

Preheat the oven to 425 degrees F. Put the cauliflower, garlic, olive oil, and a light sprinkle of salt in a baking dish with sides. Mix it together and put it in the oven for 30 minutes. Every 10 minutes give it a stir. Meanwhile, cook your pasta according to the package directions, drain, and set aside. When the cauliflower is done roasting, put it in a blender or food processor, add in the salt, lemon juice, 2.5 cups of the vegetable broth, cashew cream, and a little fresh ground pepper. Blend it all together until it's smooth. If you want the sauce thicker you may be done right here, but if you prefer it to be thinner/smoother, add in more of the vegetable broth and blend. Add in more of the broth until you get it to the consistency that you desire. Stir the sauce into the pot of pasta until it's all covered. Serve and enjoy.... yum! This is a kid friendly vegan recipe that the whole family will love.
