Preparing vegan food can be super easy and simple. It doesn't need to be elaborate, as many recipes I come across appear to be. It can be simple, quick, and satisfying. This is something that I make probably once per week. It's literally takes 15-20 minutes to get on the table and everyone likes it. Plus, it's healthy!
What's in these simple vegan soft tacos, or burritos if you want to call them that? This is what we put in our simple vegan soft tacos:
- Organic beans (canned, your choice of what type, we usually do black bean)
- Organic rice
- Vegan cheese (shredded, we prefer Follow Your Heart brand)
First thing I do is get the rice cooking, and while it is cooking I get out my tortillas and heat them up, lay them out, and start preparing the other ingredients. Chop a little onion, lettuce, and tomato. Open and drain the beans, then heat them up. Once the rice is done I first make a layer of it on the tortilla, then add the beans, then all other toppings. If I have vegan sour cream on hand I top it off with that. Delicious! A quick vegan meal that is healthy and tasty. The kids like it, too!
This is my husband's plate above. He eats three for lunch, while I only eat one. I serve it up with some fruit, too! Easy vegan food.
