I have two favorite cookbook authors - Robin Robertson and Laura Theodore, the Jazzy Vegetarian. Their books are awesome and I have made my family many great meals from them. Last night, I really wanted some soup, so I decided to make the white bean and kale recipe from the Jazzy Vegetarian's book called Vegan-Ease. I love her cooking show and her cookbooks!
This recipe was simple, with the bulk of it being white beans, kale, and tiny pasta. I added more broth than the recipe called for, because I like to have more broth in my soups. It was simple to make! Within a half an hour I had this tasty meal on the table for my family. I served it up with some crusty French bread and some melon slices. A healthy meal that was quick to make and everyone liked... plus, I have leftovers for lunch. Yum!
